Paleo Coconut Milk Latte Recipe
Paleo Coconut Milk Latte Recipe is great made from roasted ground chicory root, a great caffeine-free substitute. Chicory root is also rich in prebiotics. You can also use half roasted chicory and half regular coffee.
INGREDIENTS- please use organic ingredients
- Roasted coffee beans – ground
- OR
- Roasted Chicory root – found in the organic bulk bins at the natural food store
- 1/4C to 1/3C Unsweetened canned coconut milk, cream, or whole milk
- Ground cinnamon – optional
- Sweetener – 100% liquid Stevia comes in all kinds of flavors …hazelnut, chocolate raspberry, etc. or try coconut or palm sugar, both have a fairly low glycemic index. You can also use Lucuma or Yacon Root Powder
DIRECTIONS: brew roasted chicory “ root coffee” or regular coffee grounds. Or use a mixture of half chicory and half regular coffee. If you don’t have a cappuccino maker you can make coffee in a regular coffee maker.
NOTE—when using roasted ground chicory root, substitute the same amount as regular coffee.
If using sweetener other than liquid Stevia add to milk of choice. Froth milk. If you don’t have a machine that does this then heat the milk in a small saucepan on the stove. Add to an inverted blender cup and mix on high to froth. Or use a hand blender or a whisk to froth the milk by hand.
Pour coffee in cup, add liquid Stevia if using, pour hot milk into cup, leaving enough room and reserving the foamy or frothy part of the milk to scoop on top of your chicory root latte.
Dust with cinnamon or raw cacao powder, if desired.
