EASY SUGAR FREE REFRIGERATOR JAM

Easy sugar free refrigerator jam is also pectin free. This is Paleo friendly recipe. And a Vegan friendly quick jam recipe. Use any kind of fresh or frozen berries you like. Or a combination of different berries. Or use other fresh or frozen fruit. Try peaches, apricots, mangos, cherries, etc. Fruit is naturally sweet. If you must sweeten, use raw, unpasteurized honey for Paleo or Primal Diet. Or Grade B, Maple Syrup for Vegan or Plant based Diet. White Chia Seeds look best. But you can also use Black Chia Seeds.

INGREDIENTS
•2 Cups Fresh or Frozen Berries, any kind
• 2Tablespoons White Chia Seeds, or use Black Chia Seeds
•2Tablespoons Raw Unpasteurized Honey or Maple Syrup, more or less to taste

DIRECTIONS–blend all ingredients in blender, refrigerate until firm.

Benefits of Chia Seeds

Salvia Hispanica or Chia Seeds are small white or black seeds. These seeds have a long history. Chia seeds were a staple food of the Aztecs and Mayans. Chia seeds transported easily. And were used to increase the energy levels while hunting. Chia seeds absorb about 10 times their weight in water.  And expand to 16 times their original size. This results in prolonged hydration and retention of electrolytes. Chia seeds are great as a natural thickener or gel.

    Would this be ok frozen, then re-thawed?
