ALL NATURAL FROSTING DYES AND COOKIE SPRINKLES
UNSWEETENED SPRINKLES
Use zest tool to zest rinds of limes, lemons, cuties, or tangelos. Dry zest in warm oven on parchment paper lined baking sheet or in dehydrator. Sprinkle on frosted cookies. Note: zest will flavor frosting.
NATURAL COLORED SUGAR SPRINKLES
Start with CLEAR or white sanding sugar. Mix with fruit or vegetable juice concentrates, premade natural dyes, or homemade natural dyes, instructions follow. Mix 1/2 cup of sanding sugar with 1 teaspoon of thawed juice concentrate or a few drops of natural food coloring.
Green Decorating sugar—mix 1/2 teaspoon matcha green tea powder plus 1 teaspoon hot filtered water with 1/2 cup of sanding sugar.
Line a baking sheet with parchment paper, top with sanding sugar mix, place in oven set to WARM, turning sugar mix occasionally until completely dry. Or use dehydrator to dry mix completely before using.
Store colored sugar sprinkles in an airtight container until ready to use.
NATURAL FOOD COLORING
- EGG WASH GLAZE—whisk egg white + 1 tablespoon filtered water, brush on cookies before baking.
- GREEN—mix green matcha tea with liquid for frosting, before adding other ingredients.
- RED—run raspberries thru a juicer then a fine mesh strainer or mash raspberries and push through a fine mesh strainer. Add juice to small saucepan, simmer until thickened. Run thru fine mesh strainer again and cool before using.
- PINK—press pieces of peeled red beet root thru garlic press to get juice, if small pieces fall into juice, pour thru fine mesh strainer.
- MAROON—follow instructions above then add beet juice to a saucepan and simmer until thickened.
- LAVENDER—press blueberries thru a garlic press to get juice, if small pieces fall into juice, strain through fine mesh strainer.
- PURPLE—run red/purple cabbage thru juicer, using outer leaves and avoiding the white, center ribs.
- BLUE—use red or purple cabbage juice, add a little baking soda to it.
- YELLOW—press pieces of golden beet root thru garlic press to get juice, if small pieces fall into juice, strain thru fine mesh strainer. Or use powdered turmeric, sparingly.
- ORANGE—run a carrot through a juicer. Strain if necessary.
- BROWN—mix raw cacao powder or carob powder into frosting.
