APPLE TART DESSERT RECIPE GLUTEN AND SUGAR FREE

INGREDIENTS CRUST

  • 2/3C Ground Flax Seed
  • 1-1/3C Raw Walnuts or Pecans
  • 1C Unsweet Shredded Coconut
  • 9-10 Medjool Dates, pitted
  • 1/4t Himalayan Salt

INGREDIENTS FILLING

  • 4 Large Granny Smith Apples or other tart apples of your choice
  • 2T Pure Maple Syrup or Raw, Unpasteurized Honey
  • 1T Cold-pressed, Expeller Walnut Oil or Butter, if not dairy-free
  • 1/2t Ground Cinnamon
  • Squeeze of Fresh Lemon Juice
  • Pinch of Himalayan Salt

INGREDIENTS GLAZE

  • Apricot or Peach Jam, no-sugar added, just 100% fruit is best

DIRECTIONS: make the crust by processing nuts of your choice and pitted dates in a food processor, until ground into a fine “flour”.  Add ground flax, oil, and salt. Continue processing until well mixed. Gather into a ball, press into bottom and sides of lightly oiled 2” deep tart pan with removable bottom. If using shallow pan, you won’t need all the crust mix.  Set crust aside. Peel, core, and chop 2 apples. Add to a small saucepan, cover, and simmer until apples are soft. Add up to 1/4 cup filtered water if apples are dry and do not start to cook. Mash softened apples with potato masher and stir in maple syrup, oil OR butter, cinnamon, and salt. Remove from heat and mash with a potato masher. Spread cooked apple filling on top of crust in tart pan.  Core and peel remaining 2 apples, slice thinly.  Arrange the thinly sliced apple pieces on top of the tart, starting on the outside edge and continuing in a spiral towards center until whole tart is covered. Cover tart with foil and bake at 350ºF for 20-25 minutes. Remove tart pan from oven, brush thickly with glaze.  Return to oven, continue baking about 10 minutes or until apples on top are cooked.  Reapply glaze several times during last 10-15  minutes of baking. Remove from oven, cool, release from pan. Slice and serve.

Optional serve this with a scoop of coconut whipped cream, traditional whipped cream, or ice cream.
