Chocolate Avocado Pudding

Chocolate Avocado Pudding + Coconut Whipped Cream. Dairy-free, lower calorie dessert recipe. Healthy way to curb a chocolate craving on a diet/weight loss. So creamy and good no one will know it’s made with healthy avocados.

INGREDIENTS – double recipe for larger batch

Please use organic ingredients…

  •  2 Hass Avocados, very ripe
  • 1/2C Coconut Milk, unsweetened – lower calorie from carton or creamier from a can, or use unsweetened Almond or Cashew Milk
  • 1/2C Raw Cacao Powder like Dagoba brand
  • 1/4C Sweetener of choice: Honey, Maple Syrup, Agave Nectar
  • 2t Pure Vanilla Extract
  • Pinch Celtic Sea Salt or Himalayan Salt
  • Optional – fresh Raspberries, fresh Mint Leaves, and Raw Cacao Powder as garnish

NOTEthis is very rich, recipe makes 4 very small servings. Pudding does not keep well. Eat within 24 to 48 hours.

DIRECTIONS

  1. Remove avocado skin and pit. In a food processor or blender mix avocados, unsweetened coconut or almond milk, raw cacao powder, and pinch of salt and mix until creamy. Stir in sweetener of choice by hand. Do not over mix.
  2. Transfer to decorative dessert cups. Chill thoroughly. Top with coconut whipped cream. Garnish each dollop of whipped cream with a fresh raspberry, mint leaves, and a sprinkle of raw cacao nibs.
