PALEO CHOCOLATE TRUFFLES RECIPE

Paleo Chocolate Truffles Recipe. Love Mounds Bars? Try these easy coconut filled dark chocolate truffles. Gluten-free, refined sugar-free and plant-based. So Paleo Chocolate Truffles recipe is great for vegan diets, too.

HEALTHIER PALEO CHOCOLATE TRUFFLES RECIPE

RECIPE INGREDIENTS

  • 1/2C Raw Slivered Almonds or any Raw Nut
  • 1/2C Unsweetened Coconut Flakes
  • 1T Virgin Coconut Oil
  • 1T Coconut Cream or Full Fat Coconut Milk
  • 1T Raw, Unpasteurized Honey or Maple Syrup
  • Pinch of Himalayan Salt
  • Optional —2T Juice of thawed frozen strawberries or raspberries, to naturally color filling pink
  • 3.5 ounce Bar of Dark Chocolate, at least 70% cacao, soy-free like Pascha Brand Chocolate

DIRECTIONS—use small bowl of food processor. Or mini chopper. Add all ingredients except dark chocolate.  Process until smooth. Stirring frequently. Work mixture as you process, Incorporate all ingredients well. Measure a level tablespoon of filling. Shape into a small ball. Use up all of the filling mixture. Giving you 10-12 balls of equal size.  Place on parchment lined plate. Cover and refrigerate. Break chocolate bar into pieces. Add to small double boiler. Or to a 8 0z. canning jar in a small saucepan of water. Gently heat water until chocolate melts. Using a spoon, dip each filling ball into melted chocolate. Place on parchment lined plate. Refrigerate until chocolate hardens. Store truffle bites in the refrigerator until ready to eat.

Note:  like more chocolate verses filling? Dip the cooled truffle balls in the melted chocolate a second time. 

USE THE LEFTOVERS! Spoon leftover chocolate into small candy molds. Refrigerate until hard. Or dip fresh strawberries into remaining melted chocolate.
