PLANT BASED ROLLED SUGAR COOKIES
Try this easy recipe for making plant-based or vegan rolled sugar cookies for Christmas. Decorate with plant-based frosting, recipe follows. Add frosting to piping bag and decorate cooled cookies or frost cookies then pipe with a different color to decorate. You can also frost the cooled cookies then add sprinkles.
INGREDIENTS
- 2C Unbleached, All-Purpose Flour
OR
- 1C Unbleached, All-Purpose Flour PLUS 1C Whole Wheat Pastry Flour
- 3/4C Sugar
- 1t Baking Powder
- 1/4C Unsweetened Applesauce
- 1/2C Expeller or Cold-pressed Safflower Oil
- 2t Pure Vanilla Extract
DIRECTIONS—mix flour, sugar, and baking powder together in large bowl. In separate bowl, mix together, applesauce, oil, and vanilla. Add wet ingredients to dry ingredients and mix well. Gather dough into a ball. If dough is too wet or sticky, knead in additional flour. Transfer ball of dough to a clean bowl, cover, and refrigerate 1 hour or until dough thoroughly chilled. Preheat oven to 350ºF. Place pie crust rolling mat [or flexible cutting board] or sheet of parchment paper on counter, dust with flour, add chilled dough ball in center, dust with flour, and flatten it out enough to start rolling it. Add additional flour on top of flattened dough ball, cover with another sheet of parchment paper and roll out to 1/4 to 1/2 inch thick. Use cookie cutters in desired shapes to cut dough. Wipe cookie cutters and dust with flour between cuts. Put on parchment lined baking sheet about 1 inch apart. Bake 8 to 12 minutes or until just lightly browned on the bottom. Remove from oven transfer to baking rack to cool. In the meantime, gather unused dough and refrigerate until chilled. Repeat process until all dough is used. Decorate cooled cookies by adding frosting to piping bag with small tip and piping designs on top of cookies. Or frost cookies and add sprinkles. NOTE: if dough is hard to work with, roll dough out on pie crust mat or flexible cutting board, then place in freezer for a few minutes before cutting out cookie shapes.

INGREDIENTS
- 3C Powdered Sugar
- 1/3C Virgin Coconut Oil, solid, if liquid refrigerate until solid
- 2t Pure Vanilla Extract
- 1T —2T Full Fat Coconut Milk, chilled
DIRECTIONS—mix powdered sugar and solid coconut oil. Stir in vanilla and 1 tablespoon coconut milk. Beat until smooth and spreadable, keeping frosting thick. Add more milk as needed. Keep cookies refrigerated. necessary.
