INGREDIENTS – makes about 6-8 pops depending on your mold
3C fresh or frozen raspberries
1C filtered water
3T fresh squeezed lime juice
1/2t guar gum – optional, used in commercial frozen confections to keep them “biteable”
*Sweetener - see below
1 scoop protein powder – optional
Bamboo Forks or Popsicle Sticks
3 ounce Dixie Cups, paper not plastic, please or a stainless steel or BPA free popsicle mold
*NOTE: if the natural sugar in the fruit is not enough and you absolutely must sweeten try using 100% liquid Stevia drops or 100% Stevia powder from the health food store. The grocery store brands of Stevia are processed with harmful chemicals and have added fillers. Or use 3T of coconut or palm sugar.
DIRECTIONS:
In a blender, add all ingredients including optional sweetener if you are using, and mix well. Pour into 3 ounce size paper Dixie cups. Add a bamboo fork or other stick. Put in freezer until frozen solid. Remove paper cup by tearing it away from the frozen pop, discard paper, and enjoy! If paper does not tear away easily, run the pop under warm water.
HEALTHY HINTS & TIPS: Plastic can release harmful chemicals into the food when you freeze it, use paper dixie cups or a stainless steel popsicle mold. Adding protein prevents the natural and added sugar in the fruit from entering your system too quickly an spiking your blood sugar.
