
Watermelon Granita with Honey
Watermelon Granita with Honey is refined sugar-free so it’s Paleo Diet compatible. Plus, it’s a yummy low-calorie and fat-free alternative to ice cream.
Watermelon Granita with Honey
INGREDIENTS – please use organic ingredients
- 4C Fresh Watermelon, cubed with seeds removed
- 2T to 1/4C Raw, unpasteurized honey, more or less to taste
- 1/2 Lemon, freshly squeezed
- Optional – Fresh Basil or Mint sprigs
DIRECTIONS - add watermelon, small amount of honey, and lemon juice to blender. Blend ingredients until smooth. Taste mixture, adding more honey if it isn’t sweet enough for you. You can also add a small sprig of Basil or Mint to the blender for a unique taste. Once the mixture tastes just the way you want it to, transfer to a shallow glass baking dish. You want as thin a layer of frozen watermelon as possible. But make sure the baking dish fits in your freezer before filling it. Freeze watermelon mixture for an hour or more, until frozen. Remove from freezer. Scrape frozen watermelon with the tines of a fork, into shavings. Transfer the shavings into individual ice cream or dessert cups. Garnish with sprig of fresh basil or mint, if desired. Serve immediately. You can also return individual cups to the freezer for 10 to 15 minutes, to firm up the granita before garnishing and serving.

- 100% Liquid Stevia Drops, to taste
- 1/2 Lemon, freshly squeezed
- Optional – Fresh Basil or Mint sprigs
DIRECTIONS - add watermelon and lemon juice to blender. Blend ingredients until smooth. Add liquid Stevia drops, sparingly. Stevia is super sweet, you won’t need much. Taste mixture, adding more Stevia if it isn’t sweet enough for you. You can also add a small sprig of Basil or Mint to the blender for a unique taste. Once the mixture tastes just the way you want it to, transfer to a shallow glass baking dish. You want as thin a layer of frozen watermelon as possible.
