White Bean Cannellini Recipe. Easy homemade, non-fat crockpot recipe. Homemade beans are cheaper & healthier than canned beans and are high in fiber.

WHITE BEAN CANNELLINI RECIPE

INGREDIENTS

  • 32 oz. Organic Vegetable Broth, like Pacific brand
  • 1C Dried Cannellini or White Kidney Beans
  • 1 Bay Leaf

DIRECTIONS: wash and sort beans, discarding any bad beans. Add all ingredients to a large saucepan. Bring to a boil, reduce heat and simmer until beans are tender, about 1 1/2 to 2 hours.

EASY CROCKPOT RECIPE: put all ingredients in a crockpot and cook on high until beans are tender. If you are leaving for the day put the crockpot on warm, half a day put the crockpot on low.

TO MAKE REFRIED BEANS

Cool desired amount of beans, drain, and mash with a fork or potato masher. If beans are too thick, add a little water or extra virgin olive oil. You can also add dried spices of your choice, like: salt, black pepper, cayenne pepper, chili pepper, chipotle pepper, garlic powder, onion powder, etc. To cook refried beans, heat a small amount of extra virgin olive oil or safflower oil in a skillet, over medium heat.  Add mashed beans, cook until firm. Serve immediately.

WHITE BEAN HUMMUS

INGREDIENTS

  • 1-1/4C Homemade White Beans
  • 3T Tahini or Almond Butter, unsweetened
  • 1 Lemon, fresh squeezed
  • 3 Garlic Cloves, peeled
  • 2T Extra Virgin Olive Oil
  • 1/2t Himalayan Salt, more or less to taste
  • 1/4t Chipotle Pepper, more or less to taste, it’s very hot

Optional, add 1C of one of the following: artichoke hearts in brine {drained}, roasted red peppers, sun-dried tomatoes {soak and chop} or try using a variety of roasted vegetables. You can also roast the garlic cloves before using.

DIRECTIONS—make beans ahead of time and refrigerate. If using canned beans, rinse and drain.  Add to food processor. Measure out artichoke hearts and add to food processor along with all other ingredients. If you don’t want this spicy, use less chipotle pepper or substitute fresh ground white or black pepper. Or add more chipotle pepper to make this spicier.
