Grilled Chicken Breast BBQ Sauce Recipe. Texas-style barbeque sauce packs a wallop of flavor & heat. Or make it mild. For grilled ribs, pork and beef, too.

Brine the chicken before grilling. Using either the wet method. Or the dry method. In a hurry? Skip brining. And use extra homemade barbeque sauce. Recipe follows.

GRILLED CHICKEN BREAST RECIPE

INGREDIENTS

  • 4 boneless, skinless, chicken breasts
  • Optional—Sage leaves/woody stems
  • Optional—Rosemary/woody stems
  • Smoking chips—pecan or hickory or other
  • Optional – choose wet or dry brine

BASIC WET BRINE—POULTRY

  • 2C Filtered water
  • 3C ice cubes
  • 2T Herbed salt or sea salt
  • 2T Coconut or raw sugar
  • 1t Black or white Peppercorns
  • 1 Bay Leaf
  • 1T Smoked Paprika
  • 1T Sage, fresh or 1t dried
  • 1T Rosemary, fresh or 1t dried
  • 2T Italian Parsley, fresh omit if using dried
  • 2-4 Garlic Cloves
  • 1 Onion
  • 1-2 Jalapeños—omit for mild

DIRECTIONS: mix all ingredients, in a saucepan. Except for ice and fresh vegetables.  Bring to a boil. Stir to dissolve sugar. Remove from heat. Add ice. Mix. Let cool completely.  Put chicken breasts in single layer in shallow glass baking dish. Cover with cooled brine.  Wash and slice vegetables. Add in a layer on top of chicken.  Cover. Refrigerate 1-2 hours before grilling. Turn chicken at least once during brining. Chicken in brine can be refrigerated for 8-24 hours.

DRY BRINE RECIPE—POULTRY

INGREDIENTS

  • 1/4C Coconut or raw sugar
  • 1/2C Smoked Paprika
  • 1t Chipotle Pepper or up to 3T
  • 6T Garlic Powder
  • 3T Onion Powder
  • 1T Sea Salt
  • 2-1/2T Dried Rosemary
  • 2-1/2T Dried Sage
  • OR
  • 1/2C Herbed Salt made with Fresh Rosemary and Sage

DIRECTIONS: mix all ingredients. Rub into chicken breasts just to coat. Don’t go too heavy. Cover. Refrigerate, 1-2 hours before grilling.

GRILLING: soak sage, rosemary, and/or smoking chips. Use water or beer. Let soak up to 24 hours before grilling.  Heat grill.  Place chicken breast on hot grill. Cook 3-5 minutes on each side. This sears the meat.  And keeps it juicy. Move chicken to indirect heat. For gas grill, lower temperature to medium.  Add sage, rosemary, and soaking chips to direct heat. Apply barbeque sauce liberally. Close lid so wet herbs and chips “smoke”. Turn chicken over every 3-5 minutes. Coating with BBQ sauce each time. Until chicken is cooked through.  Remove from grill. Serve with your favorite sides.

HOMEMADE BBQ SAUCE RECIPE 

INGREDIENTS

  • 1-1/2C Ketchup, like Annie’s Organic Ketchup
  • 1/2C Water or Dry White Wine
  • 1/4C Olive Oil
  • 1/2 Onion, cut in quarters
  • 4 Garlic Cloves, cut in half
  • 1 Celery Stalk with leaves
  • 1/4C Lemon Juice, fresh squeezed
  • 2T Blackstrap Molasses or Raw, Unpasteurized Honey
  • 2T Apple Cider vinegar
  • 1/4C Worcestershire sauce
  • 2t Liquid Smoke—optional
  • 1T Smoked Paprika or Regular Paprika
  • 1/4 t Chipotle pepper  powder or up to 2T for hotter sauce
  • 1 Hot Pepper—seeds and membranes for hotter sauce
  • OR
  • 1/2 Bell Pepper for mild
  • 1 Bay Leaf

DIRECTIONS—use a small saucepan. Add all ingredients. Bring to a boil on stove top. Reduce heat. Simmer 1-2 hours. Strain or remove cooked vegetables, peppers, bay leaf.
