TEXAS STYLE CHICKEN FAJITAS

Texas style chicken fajitas. On the grill or in a cast iron skillet. Use romaine lettuce ‘tortillas’ for low-calorie & gluten-free. Quick & easy meal recipe.

Texas style chicken fajitas
INGREDIENTS

  • 4 Chicken Breasts, sliced lengthwise into strips
  • Romaine Lettuce Leaves
  • 1 cup Dry White Wine, sulfate-free
  • 1/4 cup Coconut Oil, unrefined and virgin or other oil
  • 2 Limes, fresh squeezed
  • 1 Onion, sliced
  • 3 cloves Garlic, pressed or minced
  • 2 Jalapeño or Chile peppers, sliced lengthwise in strips
  • Pepper, fresh ground, to taste
  • Celtic Sea Salt or Himalayan Salt, to taste
  • Optional – fresh herbs like rosemary, Italian parsley, sage, etc.

Texas Style Chicken Fajitas
NOTE – if you aren’t gluten-free you can use flour tortillas, corn tortillas, sprouted grain tortillas, or sprouted corn tortillas. Sprouting grains unleashes their protein which helps prevent the tortillas from being a source of empty-carbs. Gluten-free diets you can also use brown rice tortillas or exotic black rice tortillas.

DIRECTIONS – in a large glass casserole or baking dish just large enough to hold the chicken breast. Whisk together the wine, lime juice, oil, and pressed garlic. Cut fresh herbs into large pieces, if using. Add to liquid. Place chicken breast on top of liquid. Using tongs, turn chicken breasts over. Coating both sides well. Add sliced onions and hot peppers. On of chicken breasts. Cover dish. Marinate chicken. About 15 to 20 minutes on each side. Cover chicken and marinate in refrigerator. Up to 24 hours. If you are not  cooking it right away.  

In the meantime, heat grill to medium heat. Once grill is hot  add chicken. Cook in a wire basket with sliced onion and peppers. For best results. Or put sliced onions and peppers on top of chicken during grilling. Close lid. Turn chicken halfway through grilling. Use marinade to brush the meat during grilling. To prevent it from drying out.

Or cook chicken in a heated cast iron skillet on the stove top. Or broil it.  

After chicken is cooked. Set grilled onions and peppers aside. Slice chicken diagonally on large cutting board. Add salt and pepper to taste.

In the meantime, wash and divide Romaine lettuce leaves. Add a little bit of chicken to each Romaine lettuce leaves. Optional – top with grilled onions and peppers. Add fresh salsa or pico de gallo. Serve with black beans and brown. 

TOP WITH FRESH SALSA OR PICO DE GALLO AND SERVE WITH SIDES LIKE HOMEMADE BLACK BEANS AND BROWN RICE.
