
CHOCOLATE (AVOCADO) PUDDING

Creamy chocolate pudding made from ripe avocados and topped with coconut whipped cream for a quick and easy dessert.
Ingredients
- 1 Avocado (very ripe, medium size)
- 1/4 cup Coconut Milk, unsweetened (from carton not can or unsweetened Almond Milk)
- 1/4 cup Raw Cacao Powder (or use Dutch or alkaline processed cocoa powder)
- 2 tablespoons Agave Nectar (or use pure maple syrup or honey - raw is best)
- 1 teaspoon Pure Vanilla Extract
- pinch Celtic Sea Salt or Himalayan Salt
Note
This is very rich and the servings are small. It doesn't keep long so the recipe only makes 2 servings, please double it if you need 4 servings.
Directions
Step 1. | |
Remove avocado skin and pit. In a food processor or blender mix avocado, unsweetened coconut or almond milk, raw cacao powder, and pinch of salt and mix until creamy. Mix in agave nectar and vanilla extract. Do not over mix. | |
Step 2. | |
Put in decorative dessert cups. Chill thoroughly. Top with coconut whipped cream, find recipe link below. Garnish with raw cacao nibs or shaved dark chocolate. | |
Step 3. | |
This does not keep well. Make in the morning of the day your are serving it or the night before but I wouldn't recommend keeping it in the refrigerator more than a couple of days. |
