EASY ARUGULA SALAD RECIPE
Easy Arugula Salad Recipe. Quick & easy meal idea. Add cooked quinoa, vegan or lean meat, Paleo diet + your favorite vegetables. Low-calorie 4 weight loss.
Start with a bed of fresh, washed arugula per bowl. Mix in some salad dressing {recipe follows}. Let arugula ‘marinate’ turning several times before serving. Mix in 1/2C to 2/3C cooked and cooled quinoa {white, red, black, or trio mix}.

Top with fresh cut vegetables of your choice like: tomatoes, cucumber, carrot, celery, bell pepper, onion, etc.
Or add cooked vegetables like: asparagus tips, artichoke hearts, olives {sliced}, green beans {cut in one-inch pieces}, butternut squash {cut in chunks}.
Also, try adding a fresh fruit like: berries like raspberries, blueberries, strawberries {sliced}, apple {chopped}, grapes {sliced}
Plus a light protein of your choice….
Meat Options – cooked, cooled, chopped
- Turkey breast
- Chicken breast
- Lean Sirloin
- Wild-caught Shrimp
- Wild-caught Fish
Vegetarian Options
- Hard-boiled egg(s) – chopped
- Hard Cheese, cubed
- Feta or Goat Cheese, crumbled
*Vegan & Raw Vegan Option
- Beans, of choice cooked & cooled
- Raw Nuts
- Raw Pepitas or Pumpkin Seeds
*Note: add chunks of fresh avocado for a more filling salad
EASY HOMEMADE DRESSING
For 1-2 Salads
- 2T Balsamic Vinegar
- 1T Fresh Squeezed Lemon Juice
- 1T Extra Virgin Olive Oil
- 1T Maple Syrup or Raw Honey
- Salt & Pepper, to taste
- Optional – 1T Dijon Mustard
- Optional – 1/4 Garlic Clove, pressed
DIRECTIONS — whisk all ingredients together or add to salad dressing bottle, cap bottle, and shake well.
For a family of four
- 1/2C Balsamic Vinegar
- 1/4C Fresh Squeezed Lemon Juice
- 1/4C Extra Virgin Olive Oil
- 1/4C Maple Syrup or Raw Honey
- Salt & Pepper to taste
- Optional – 1/4C Dijon Mustard
- Optional – 1 Garlic Clove, pressed
DIRECTIONS — Mix all ingredients in an inverted blender cup until thickened. Or whisk all ingredients together. Or put all ingredients in a salad dressing bottle. Cap bottle. And shake well.
