Fresh Homemade Mango Salsa
Watermelon Salsa, see note
INGREDIENTS – please use organic ingredients
- 1 large ripe mango, *see note for Fresh Watermelon Salsa
- 1/2 small white onion
- 1 jalapeno peppers, seeds and membranes contain the heat, leave for spicier salsa
- 1 fresh squeezed lime
- 1/2t Himalayan or Celtic Sea Salt
- Pinch of fresh ground white pepper
- Optional – 1/4 cup cilantro or 1/8 cup mint leaves, loosely packed
- Optional – 1 Clove Garlic, pressed
DIRECTIONS – peel and cube mango, removing pit and discarding. Add mango chunks to a small bowl. Chop onion, jalapeno, and cilantro or mint if using and add to bowl. Juice a fresh lime and add to bowl with salt and pepper. Mix well. Salsa will have more flavor if you let it sit at room temperature after mixing.
NOTE – for Watermelon Salsa, substitute mango for 1 red tomato, diced, plus 1C fresh watermelon diced into small pieces.
Serve either salsa with grilled, baked, or broiled chicken, fish, or other seafood. Also great with blue corn tortilla chips. Try organic Guiltless Gourmet Brand.

Choose a mango that has different shades of red, orange, and yellow. And gives slightly when you apply pressure to the skin. Skin should be smooth and unblemished. Eye or the end of the leftover stem should still be in fruit. Place harder, under rip mangoes with green still on them, in a paper bag on the counter to ripen. Check daily. Once mango is ripe, use immediately or refrigerate. You can also cube the mango and freeze the diced fruit to use in smoothies and sorbet.
Quick & easy mango ‘ice cream’
INGREDIENTS – please use organic ingredients
- 1 fresh Mango, cubed and frozen
- 1 Very Ripe Banana
- Optional – 1 Handful Unsweetened Coconut Flakes
- Optional – Full Fat Coconut Milk or unsweetened almond, coconut, or cashew milk from a carton
DIRECTIONS - add mango chunks and a very ripe banana to a blender. Along with a handful of shredded, unsweetened coconut flakes. Mix until smooth and creamy. If fruit blend is too thick to mix add a little full fat coconut milk from a can to get it to blend. Or for a lower-calorie version use unsweetened nut milk like coconut, almond, or cashew from a carton at 45 calories or less per cup.
