INGREDIENTSmakes 4 servings

  • 2 Dragon Fruits
  • 1 Papaya or Mango
  • 1/4 to 1/3 of a Pineapple
  • Lime, fresh squeezed

Please use organic ingredients

DIRECTIONS—slice dragon fruits in half, lengthwise, remove fruit  with sharp paring knife, leaving skin intact. Cut fruit into chunks, add to large bowl. Peel and slice the papaya or mango and pineapple, add to bowl. Juice lime and mix with fruit.  Fill the hollowed out dragon fruit skins with the fruit salad and serve.

Easy Cucumber Dragon Fruit Spinach Salad Recipe

Whisk two tablespoon each: rice vinegar, melted coconut oil, coconut or palm sugar in a bowl. Slice cucumber into rounds with a mandolin, add to bowl, set aside to marinate.  Slice some dragon fruit pieces into thin strips. Arrange bed of baby spinach on 2 plates. Drizzle with marinade from bowl and top each bed of spinach evenly with marinated cucumbers, dragon fruit slices, and a sprinkle of sesame seeds.

What makes Dragon Fruit a Super Food?

Pitaya or dragon fruit grows in the tropical regions of South America, Vietnam, and Thailand. Dragon fruit is actually the fruit of a night-blooming cactus. It is an exotic looking fruit with a magenta or fuchsia skin and pulpy, white {pictured to the right} or purple center speckled with tiny black seeds. The soft inner flesh tastes similar to a pear or a kiwi. There is also a yellow skinned variety of dragon fruit.
Dragon fruit is low on calories and high in fiber. As well as being a good source of antioxidants, dragon fruit is nutritionally well-rounded. It contains vitamin B, vitamin C, phosphorus, magnesium, and iron. It is also surprisingly high in protein, for a fruit, containing 2 grams of protein per serving. Plus, it’s a rich source of omega-3 essential fatty acids.

Farmers on the Big Island of Hawaii are experimenting with growing dragon fruit with some success. Like they say on the islands, lucky to live Hawaii, where we get to enjoy fresh, locally grown dragon fruit.
