Fresh Watermelon Salsa
Fresh Watermelon Salsa with or w/o ripe tomatoes lends a fun flavor to fish tacos or chicken fajitas. Or serve as an appetizer with thick cucumber rounds.
INGREDIENTS – please use organic ingredients
- 2C Fresh Watermelon, cubed or diced into small pieces
- OR
- 1 Red or Yellow Tomato, diced + 1C Watermelon, cubed or diced
- 2T your choice of one of the following: Cilantro, Mint, or Thai Basil {Holy Basil} leaves, chopped
- 1/2 Small Red Onion or 2-3 Scallions, white end only
- 1 Lime, fresh squeezed
- Pinch of Himalayan or Celtic Sea Salt, more or less, to taste
- Pinch of fresh ground white pepper, more or less, to taste
- Optional – 1/4C Jicama or Hearts of Palm, chopped
- Optional – 1 Clove Garlic, pressed
- Optional – 1 Jalapeno or Serrano Pepper, finely chopped, include seeds and membranes for spicier salsa
DIRECTIONS – slice and cube watermelon. Dice tomato, if using. Add watermelon cubes and tomato, if using to a small bowl. Chop onion and mint. Add to bowl. Juice a fresh lime. Add to bowl. Add salt and pepper, more or less, to taste. Mix well. Salsa will have more flavor if you let it sit at room temperature after mixing.
If using, finely chop Jicama and add to bowl. If using, mince jalapeno or Serrano pepper. Add to bowl. Leave seeds and membranes for a spicier salsa. If using, press garlic clove into bowl. If you don’t have a garlic press, finely mince garlic clove with a knife.
Serve salsa with fish tacos, or grilled, baked, or broiled chicken, fish, or other seafood entrees. Also great as an appetizer, served with thick slices of fresh cucumber in place of tortilla chips. Or try it with baked blue corn tortilla chips like organic Guiltless Gourmet Brand.
