SUMMERTIME SALAD

Fresh corn on the cob, crisp cucumbers, and juicy ripe tomatoes bring the taste of Summertime to the table with this quick and easy side dish.

Ingredients

  • 2 small Ears of Corn
  • 1 small English Cucumber (or substitute a regular cucumber)
  • 6-8 Cherry Tomatoes
  • 1 tablespoon Coconut Oil
  • 2 tablespoons Lime Juice (fresh squeezed)
  • 1 teaspoon Coconut or Palm sugar (or substitute brown sugar or white sugar)
  • pinch Celtic Sea Salt or Himalayan Salt (or substitute regular salt)
  • dash Pepper, fresh ground

Directions

Step 1.
Shuck the corn on the cob then wash it. Hold the cob of corn upright on a plate or a cutting board and using a filet knife, cut off the corn kernels. Rotate the cob until all the corn has been cut off the cob, then repeat with the second ear of corn. Put the corn kernels in a large mixing bowl.
Step 2.
Wash cucumber. Cut cucumber into four pieces lengthwise then slice each section into small pieces and add to mixing bowl. Wash cherry tomatoes then slice them in fourths and add to mixing bowl.
Step 3.
In a small bowl, whisk together the lime juice, coconut oil, salt, and pepper. You can also use a food processor. Add the mixture to the bowl of vegetables and mix well.
