Tomato Cucumber Gazpacho Recipe
Tomato Cucumber Gazpacho Recipe is easy to make. Great appetizer or soup to cool you down on a hot day + it’s low calorie & great for a diet or weight loss.
INGREDIENTS – please use organic ingredients
- 5-6 large tomatoes
- 1 medium red onion, cut into 1/4-inch cubes
- 1 English or regular cucumber
- 1 Jalapeno or Serrano Pepper
- 1/4 cup fresh cilantro leaves, packed
- 1-2 garlic cloves
- 1 lime, fresh squeezed
- 2 tbsp. red wine vinegar
- 1T extra virgin olive oil + some for garnish
- 1/2t Celtic Sea Salt or Himalayan Salt
- 1/4t fresh ground pepper
- Optional – celery stalks, green onion, diced cucumbers, red and yellow Serrano peppers, and Basil leaves as garnish
DIRECTIONS – please use organic ingredients
- Wash all ingredients. Remove the stem from the tomatoes and quarter them. Add them to a food processor or blender.
- Juice lime and add to tomatoes.
- Remove ends of cucumber, cut into chunks, you can leave skin on.
- Remove ends and skin from onion, quarter.
- Cut stem off of jalapeno and cut in half. You can leave membranes and seeds for a hotter gazpacho or remove and discard them.
- Peel 1-2 garlic cloves, depending on how much you like garlic.
- Wash cilantro and chop off the bunch of stems and measure leaves.
- Add everything to the food processor or blender. Add salt and pepper then process or blend gazpacho until well chopped. You can make it chunkier or smoother, depending on your preference.
- Refrigerate before serving. Ladle soup into bowls or food tasting bowls or glasses.
- Cut celery stalks into 4 to 6 inch pieces, depending on the depth of serving bowls. Make 8 cuts in top portion of celery pieces to make decorative end, as pictured. Add to individual serving bowls. Chop stalk of green onion. Slice yellow and red Serrano pepper. Dice cucumbers. Use chopped and diced vegetables as garnish top of gazpacho, around each celery stalk.
