Watermelon Feta Mint Salad…yum! Or use Goat Cheese. If you’re Paleo or Raw Vegan don’t miss this, use Almond Nut Cheese instead. For Vegetarian use tofu.

 

Watermelon Feta Mint Salad

INGREDIENTS – please use organic ingredients

  • 4C Watermelon, cubed
  • 1/2C Feta or Goat Cheese, crumbled
  • 1/2 Small Red Onion
  • 1/2C Fresh Mint Leaves
  • 1T to 2T Fresh Lime Juice
  • Pinch of Himalayan or Celtic Sea Salt, more or less, to taste
  • Pinch of White Pepper, or use black, more or less, to taste

DIRECTIONS – slice watermelon, cut into cubes. Measure out 4 cups of cubed watermelon. Add to glass mixing bowl. Thinly slice the onion, then cut each thin slice into quarters. Add to bowl. Chop the mint leaves. Add to bowl. Freshly squeeze the lime juice. Add one to two tablespoons to bowl. Add a pinch of salt and pepper, more or less, to taste. Mix well. Crumble Feat or Goat cheese. Gently mix in. Being careful not to over mix the salad once you add the cheese crumbles.  Turn into decorative serving bowl or spoon onto individual salad plates. Garnish with mint sprig.

Paleo Diet or Raw Vegan Option

Watermelon Almond Nut Cheese Mint Salad

INGREDIENTS – please use organic ingredients

  • 4C Watermelon, cubed
  • 1/2C Almond Nut Cheese, cut into small cubes, *see note
  • 1/2 Small Red Onion
  • 1/2C Fresh Mint Leaves
  • 1T to 2T Fresh Lime Juice
  • Pinch of Himalayan or Celtic Sea Salt, more or less, to taste
  • Pinch of White Pepper, or use black, more or less, to taste

NOTE - Kite Hill brand is a great tasting almond nut cheese. You can find it at Whole Foods Market.

 

Vegetarian or Vegan Option

INGREDIENTS – please use organic ingredients

  • 4C Watermelon, cubed
  • 1/2C Firm Tofu, cut into small cubes
  • 1/2 Small Red Onion
  • 1/2C Fresh Mint Leaves
  • 1T to 2T Fresh Lime Juice
  • Pinch of Himalayan or Celtic Sea Salt, more or less, to taste
  • Pinch of White Pepper, or use black, more or less, to taste
