Watermelon Gazpacho Paleo Recipe
INGREDIENTS – please use organic ingredients
- 3C Watermelon, cubed and seeds removed
- 1-1/2C Cucumber, diced, about 1 cucumber, peeled
- 1/2 Red Chili Pepper, sliced, with seeds and membranes removed, *see note
- 1/2C Red Onion, about ½ of a small onion
- 1 Garlic Clove, peeled
- 1T Virgin Coconut Oil, unrefined, plus more as garnish {you can also use Extra Virgin Olive Oil}
- 2T Cilantro leaves, loosely packed
- 1 Lime, fresh squeezed
- 1/8t Celtic Sea Salt or Himalayan Salt
- Dash of Fresh Ground White Pepper
DIRECTIONS - set aside half of the fresh cilantro leaves. Cut off a small piece of the cucumber before peeling, to use as garnish. Set aside. Mix all other ingredients in a blender or food processor. Blend or process until smooth. Chill thoroughly. Pour into small serving bowls or mini dessert cups. Chop remaining cilantro leaves. Dice remaining piece of cucumber. Add a small amount of oil to the middle of each serving. About one teaspoon, or less. Float chopped cilantro and diced cucumber on top of oil on each serving. Or garnish with sprig of mint.
*NOTE - for spicier gazpacho include seeds and membranes and/or use whole chili pepper
