Shrimp Salad Recipe Low Carb

LEAFY GREEN SALAD + COOKED & COOLED WILD-CAUGHT SHRIMP

or

SUBSTITUTE ANY LIGHT PROTEIN OF CHOICE FOR SHRIMP

Start with a bed of your favorite greens and your favorite salad veggies. In a hurry?  Use a pre-washed bag of salad greens. Please use organic ingredients.

  1. LEAFY GREENS—one or more of the following: wild greens, Spring greens, mustard greens, arugula, baby spinach, baby Romaine, Romaine, Boston leaf lettuce, watercress, dandelion greens, etc. not Iceburg lettuce.
  2. LIGHT PROTEIN—4 ounces cooked, choice of: fish, shrimp, scallops, other seafood, chicken breast or other poultry white meat without skin, chicken thighs without skin [higher calorie], lean cuts of beef like sirloin.
  3. PLANT-BASED PROTEIN—1/4 cup to 1/3 cup total, sprouted or 1/2 cup to 2/3 cup total, cooked and cooled, your choice of one or a combination: lentils any kind, beans any kind, rice any kind but white, quinoa, kasha, buckwheat, oat groats, or any other whole grain.
  4. LOW CALORIE VEGETABLES—load up your salad with your favorite low calorie vegetables, CLICK for list.
  5. HEALTHY ADDITIONS—sprouts like Daikon radish, snow pea shoots, sunflower, etc., 1-2T raw nuts or seeds like pumpkin, 1T raw cacao nibs, gogi berries, fresh or frozen [thawed] berries.

BASIC HOMEMADE SALAD DRESSING

Mix 1 tablespoon olive oil, 2 tablespoon Balsamic or other vinegar, 1 teaspoon lemon juice, 1 teaspoon Dijon mustard, plus salt and pepper, to taste. If dressing is too sour, add a few drops of 100% liquid Stevia or 1 teaspoon raw honey or pure maple syrup.

Keep homemade salad dressing on hand, make a small bottle by mixing 1/4 cup olive oil, 1/2 cup balsamic or other vinegar, 1T + 1t fresh squeezed lemon juice, 1 tablespoon + 1 teaspoon Dijon mustard, plus salt and pepper to taste. If dressing is too sour, add a few drops of 100% liquid Stevia or 1 tablespoon + 1 teaspoon raw honey or pure maple syrup.
