How to Make Herbal Vinegars
How to Make Herbal Vinegars that preserve vibrant flavors & aromas of herbs adding complex undertones to salad dressings, marinades & more. Great as a gift. Herbal wine vinegars are easy to make. Simply steep the herbs of your choice in your favorite vinegar, strain, then add a fresh herb sprig for decoration.
INGREDIENTS- please use organic ingredients
- Vinegar of your choice like Champagne, White Wine, Red Wine, Balsamic, Apple Cider, etc.
- Fresh Herbs of your choice like Rosemary, Sage, Parsley, Thyme, Lemon Grass, Fennel, Dillweed, etc.
- Optional dried whole spices like peppercorns, cinnamon stick, star anise, cloves, nutmeg, etc.
DIRECTIONS: wash fresh herbs and set aside to dry. Pour the vinegar out of the bottle and into a clean glass or Mason jar. Stuff as many fresh herbs into the bottle as possible. Fill with the vinegar and cap tightly. Keep bottle out of direct sunlight. Shake the bottle every day for two weeks. When herbal vinegar is done, sterilize a decorative bottle and add a few fresh herb sprigs to it for decoration. Pour the herbal vinegar through a strainer, into the sterilized bottle. Use your herbal vinegar in marinades, sauces and homemade salad dressings. You can also mix a tablespoon with warm water and use it as a hair rinse. Or add a few tablespoons to a bottle of witch hazel to use as a facial toner.
Some herbs will give the vinegar a beautiful pink cast like a rose wine so make sure to use champagne or white wine vinegar with them: opal basil, bronze fennel, chive blossoms.

- Lemon Herbal Vinegar: lemon verbena, lemon grass, lemon balm + white Balsamic vinegar
- Mint Herbal Vinegar: spearmint, peppermint + apple cider vinegar
- Classic Bouquet Garni: flat-leaf Italian Parsley, thyme, bay leaf + Balsamic vinegar
- For Seafood: dillweed and lemon peel + white wine vinegar
- Christmas Time: whole cloves, whole nutmeg, cinnamon stick + red wine vinegar
- Lavender: lavender flowers + champagne vinegar
