CEDAR SALMON

Quick and easy cedar salmon made with disposable cedar papers for easy clean-u[. Cedar adds a great smoky flavor and keeps the salmon super moist.

Ingredients

  • 1lb Salmon (preferably Wild-caught)
  • 1/4 cup Dry white wine (Organic, sulfate-free from health food store is the same price)
  • 2 Lemons (Fresh)
  • 1 tablespoon Coconut Oil or Olive Oil (Unrefined and Virgin)
  • 4 Cedar Grilling Papers (see note)
  • OR -- Cedar Cooking Planks (see note)
  • 4 sheets Cedar Papers

Note

You can also put these on the grill instead of in the oven!

Directions

Step 1.
Preheat oven to 400 degrees. Soak 4 of the cedar papers in water for 10 minutes using a small bottle to weigh them down and keep them submerged. Oil the bottom of a shallow baking dish that is big enough to hold all four pieces of salmon. Wash and slice one of the lemons into 8 thin slices.


Step 2.
Remove one of the cedar papers from water and put 2 thin slices of lemon in the middle of it. Lay a piece of salmon on top of it. Wrap cedar paper snugly around it and secure with string. Lay cedar paper wrapped salmon in baking dish. Repeat with other 3 pieces of salmon. You can use a cedar plank made for cooking in place of the cedar papers.
Step 3.
Pour a little bit of the dry white wine down the middle of each of the cedar paper wrapped bundles of salmon. Place baking dish in oven, uncovered and bake for 20 minutes or until salmon in cooked through. Cut up the other lemon into wedges. Remove salmon from oven, cut strings, remove cedar wraps and serve with lemon wedges.
Step 4.
Remove one of the cedar papers from water and put 2 thin slices of lemon in the middle of it. Lay a piece of salmon on top of it. Wrap cedar paper snugly around it and secure with string. Lay cedar paper wrapped salmon in baking dish. Repeat with other 3 pieces of salmon. You can use a cedar plank made for baking in place of the cedar papers.
Step 5.

Place baking dish in oven, uncovered and bake for 20 minutes or until salmon in cooked through.
