Smoked trout salad on veggie rounds, gluten-free, dairy-free, Paleo diet friendly


SMOKED TROUT SALAD ON VEGGIE ROUNDS a gluten-free, dairy-free, Paleo diet friendly low calorie lunch for weight loss or great as an easy, light dinner.  Serve on your choice of rounds of yellow Summer squash, zucchini, or cucumber.  Or cut the veggies into thin planks, then roll them up.  Smoked Trout Salad on Veggie Rounds also make a great appetizer


  • 3.2 oz. Tin of Smoked Trout in olive oil, all natural like Cole’s Brand, see adjoining paragraph
  • 2T Red Apple, chopped with the skin on
  • 1T Scallion or Green Onion, minced
  • 1/2t Fresh Lemon Zest
  • Squeeze of Fresh Lemon Juice
  • 1 Medium size Yellow Squash or Zucchini

DIRECTIONS—slice the yellow squash or zucchini and set aside. Remove trout from tin. Optional, remove skin. Place trout on paper towels to absorb extra oil.  Set aside. Chop the apple, mince the scallion, zest the lemon and add to a small mixing bowl along with the drained trout.  Add a squeeze of fresh lemon juice and mix well.  Spread trout salad on top of the squash or zucchini slices and serve.
