POTATOES O’BRIEN

Oven baked potatoes o'brien are healthier than the stove-top version, all you need are potatoes, onions, bell pepper

Ingredients

  • 1 Onion
  • 1 Bell Pepper, green or red (buy organic, bell peppers are on the Dirty Dozen list)
  • 2 tablespoons Extra Virgin Olive Oil
  • Celtic Sea Salt or Himalayan Salt (or substitute regular salt)
  • Pepper, fresh ground (to taste)
  • 2lb Potatoes (red, Yukon Gold or any, buy organic on Dirty Dozen list)

Directions

Step 1.
Preheat oven to 425 degrees.
Step 2.
Wash and dice potatoes with skin on, into cubes. Wash onion and dice. Wash bell pepper, remove stem, membranes, and seeds then dice.
Step 3.
In a large glass baking dish or casserole dish, mix the potatoes, onion, and peppers with the olive oil, salt, and pepper.
Step 4.
Insert dish into pre-heated oven and roast for 20-30 minutes or until potatoes are soft, turning at least once during cooking.
