Oven baked potatoes o'brien are healthier than the stove-top version, all you need are potatoes, onions, bell pepper
Ingredients
- 1 Onion
- 1 Bell Pepper, green or red (buy organic, bell peppers are on the Dirty Dozen list)
- 2 tablespoons Extra Virgin Olive Oil
- Celtic Sea Salt or Himalayan Salt (or substitute regular salt)
- Pepper, fresh ground (to taste)
- 2lb Potatoes (red, Yukon Gold or any, buy organic on Dirty Dozen list)
Directions
Step 1. | |
Preheat oven to 425 degrees. | |
Step 2. | |
Wash and dice potatoes with skin on, into cubes. Wash onion and dice. Wash bell pepper, remove stem, membranes, and seeds then dice. | |

In a large glass baking dish or casserole dish, mix the potatoes, onion, and peppers with the olive oil, salt, and pepper. | |
Step 4. | |
Insert dish into pre-heated oven and roast for 20-30 minutes or until potatoes are soft, turning at least once during cooking. |
