
SWEET POTATO FRIES

These healthy fries start with fresh sweet potatoes and extra virgin olive oil, then are baked instead of fried.
Ingredients
- 4 small Sweet Potatoes or Yams (or 2 large)
- 2 tablespoons Extra Virgin Olive Oil (or Coconut Oil, unrefined and virgin)
- pinch Celtic Sea Salt or Himalayan Salt
- Variety of Spices (see recipe note)
Note
How do you like your fries...with salt? How about wtih cinnamon or pumpkin pie spice? Speaking of spice, maybe you want them hot & spicy with cayenne, chipotle, or chili pepper. Also good with fresh rosemary or try fresh chopped mint for a different twist.
Directions
Step 1. | |
Preheat oven to 450 degrees. | |
Step 2. | |
Wash and peel sweet potatoes or yams. | |
Step 3. | |
Slice into 4-6 thick pieces lengthwise. Slice each of the 4 pieces into 4-6 long strips or "fries". | |

Mix in a large bowl with the oil and salt. Add additional spices of choice. | |
Step 5. | |
Bake for 15-20 minutes, turning at least once during cooking, until fries are lightly browned on each side. | |
Step 6. | |
Serve and top with additional spice, if desired. |
TO MAKE SWEET POTATO BITES
Dice the sweet potatoes into cubes before cooking and follow the same instructions.
