These healthy fries start with fresh sweet potatoes and extra virgin olive oil, then are baked instead of fried.

Ingredients

  • 4 small Sweet Potatoes or Yams (or 2 large)
  • 2 tablespoons Extra Virgin Olive Oil (or Coconut Oil, unrefined and virgin)
  • pinch Celtic Sea Salt or Himalayan Salt
  • Variety of Spices (see recipe note)

Note

How do you like your fries...with salt? How about wtih cinnamon or pumpkin pie spice? Speaking of spice, maybe you want them hot & spicy with cayenne, chipotle, or chili pepper. Also good with fresh rosemary or try fresh chopped mint for a different twist.

Directions

Step 1.
Preheat oven to 450 degrees.
Step 2.
Wash and peel sweet potatoes or yams.
Step 3.
Slice into 4-6 thick pieces lengthwise. Slice each of the 4 pieces into 4-6 long strips or "fries".
Step 4.
Mix in a large bowl with the oil and salt. Add additional spices of choice.
Step 5.
Bake for 15-20 minutes, turning at least once during cooking, until fries are lightly browned on each side.
Step 6.
Serve and top with additional spice, if desired.

TO MAKE SWEET POTATO BITES
