Italian Tomato Beef Stew Recipe
Italian Tomato Beef Stew Recipe. Hearty, old-fashioned beef stew with rich red wine & tomato beef gravy + carrots, celery & potatoes perfect for a cold day.
INGREDIENTS
- 1lb. Boneless, Grass-Fed Sirloin or Chuck Roast, cut in 1” cubes
- 1/4C Extra Virgin Olive Oil
- 1C Dry Red Wine, sulfate-free
- 32 oz. or 4C Beef Broth, like Pacific Brand
- 1 Can Fire-roasted or Regular Diced Stewed Tomatoes, [28 oz, from BPA-free can]
- Optional – 1 Cube Vegetable or Beef Bullion Cube, like Rapunzel Brand
- 1 Onion, chopped
- 4 Garlic Cloves, peeled & pressed
- 1 Bay Leaf
- 1T Fresh Rosemary or 1t dried
- 1T Fresh Thyme or 1t dried
- 1 Celery Stalk, sliced, about 1/2C
- 2 Carrots, sliced, about 1C
- 1 Potato, skin on, cut into 1 inchchunks, about 1C to 1-1/4C
- 2T Coconut Flour or other Gluten-free Flour, note other flour may require more
- Celtic Sea Salt or Himalayan Salt, to taste
- Fresh Ground Pepper, to taste
DIRECTIONS: gently warm 2T oil, in Dutch oven. Sauté onions and garlic until translucent. Remove and set aside. Add remaining oil, warm gently, brown beef chunks over medium-high heat. Add red wine, simmer until wine is reduced and almost evaporated, stirring constantly. Add cooked onion and garlic, tomatoes, fresh herbs, bay leaf, bullion, and 3C beef broth [reserve 1C to mix with flour] to pot.
Bring to a boil, reduce heat, simmer uncovered [so liquid thickens], until beef is tender, about 1-1/2 to 2 hours, stirring occasionally. Add carrots, bring to boil, reduce heat, cover, and simmer 5 minutes. Add potatoes, bring to a boil, reduce heat, cover, and simmer 5 minutes. Add celery, bring to a boil, reduce heat, cover, and simmer 20 minutes or until vegetables are tender. In the meantime, whisk remaining beef broth into coconut flour, until dissolved. Whisk into pot, bring to a boil, stirring constantly until stew thickens. Remove from heat. Add salt and pepper to taste.
Optional – serve with warm, homemade bread and herbed butter.
