MINI MARINATED VEGGIE TACOS

Mini Marinated Veggie Tacos are great as a light lunch or diet dinner or a healthy party appetizer.  Assemble ahead of time or have fun letting your guests assemble their tacos to individual taste.  This is a quick and easy plant-based or vegan recipe.

INGREDIENTS HUMMUS

OR

  • 1-14.5 oz. Can White Beans, rinsed and drained
  • 2T Almond Butter, unsweetened
  • 2-3 Garlic Cloves, peeled & pressed
  • 3T Fresh Squeezed Lemon Juice
  • 2T Extra Virgin Olive Oil
  • 1/2t Himalayan Salt
  • 1/4t Chipotle Pepper or use Chili Pepper or Cayenne Pepper

INGREDIENTS VEGETABLES

  • Baby Romaine, 3-4 Heads
  • 1/2 Red Bell Pepper
  • 1 Yellow Squash
  • 1 Large Carrot
  • 1 English Cucumber, seeds removed
  • 2 Slices Purple Cabbage
  • Optional—Mini Sweet Peppers, sliced as garnish

INGREDIENTS MARINADE

  • 1T Raw Apple Cider Vinegar
  • 1T Coconut or Palm Sugar or 1T Pure Maple Syrup, Grade B
  • 1” Knob Fresh Ginger

DIRECTIONS—Peel ginger, slice, and press over small bowl through garlic press, adding juice and meat, and discarding pulp inside press. Or mince peeled ginger and add bowl. Whisk ginger with vinegar and sugar. Julienne all vegetables, except for lettuce and add to large bowl.  Add marinade, stir well, and stir often as you prepare rest of dish.

Make hummus by adding all hummus  ingredients to food processor and processing until smooth and creamy. Set aside. Skip this step, if using pre-made hummus. Optional—slice mini sweet peppers as garnish, set aside.

Pull baby romaine leaves off stalk and wash well.  You can serve these 2 ways…assembled or un-assembled.  To assemble put a scant tablespoon of hummus in the bottom of each lettuce “boat”.  Add marinated vegetables, leaving liquid behind in the bowl, garnish with sliced mini sweet pepper rings.

Or set out lettuce leaves, hummus, and marinated vegetables in individual serving bowls/plates and let guests assemble their own tacos.  Optional—garnish bowl of marinated vegetables with sliced mini sweet pepper rings.
