PLANT BASED MAC AND CHEESE
Plant based mac and cheese. Cauliflower + nutritional yeast make this recipe cheesy good. With gluten-free zucchini noodles. For both Vegan and Paleo Diet.
INGREDIENTS
- 1C Nutritional Yeast Flakes
- 1 Head Yellow Cauliflower, or use White, sauce just won’t be as yellow
- *1/4C Coconut Cream or Cashew Cream, see note
- 1T Extra Virgin Olive Oil
- 1 Lemon, fresh squeezed
- 2 Garlic Cloves , more or less to taste
- 1t Himalayan Salt
- 1/8t Chipotle Pepper Powder
- 4-6 Zucchini Squash, depending on how large or small
DIRECTIONS—make sauce. Cut cauliflower into florets. Discard tough center and stems. Steam in large steaming basket over boiling water. For 10-12 minutes. Or until tender. Add cauliflower to food processor. Add all other ingredients except zucchini. Process until smooth. If sauce gets cold, warm in saucepan over low heat. In the meantime, cut off ends of zucchini. Put the small, 1/8th inch blade on the spiral vegetable slicer. Cut zucchini into “noodles”. Soak zucchini noodles in salt water. 10 minutes or longer. Drain, and mix with “cheese” sauce. Or add zucchini noodles to salted, boiling water. Remove from heat, cover pot. After 5 to 10 minutes, drain “noodles”. Mix with “cheese” sauce. *NOTE: coconut cream forms at top of can of full fat coconut milk. Refrigerate can overnight. Remove can from refrigerator. Turn can upside down then open it.
HOW TO MAKE CASHEW CREAM
- 1/2C Raw Cashews
- 1/4C Warm Water
DIRECTIONS - add cashews and water to inverted blender cup. Process well. Optional soak cashews up to 4 hours, before processing.
