Red Kuri Squash Hummus
Red Kuri Squash Hummus is legume free and Paleo Diet compatible. Serve with fresh cut vegetables for a low calorie snack. Perfect for diet and weight loss. Also, great as a party appetizer served with pita bread sliced into triangles or tortilla chips.
INGREDIENTS – please use organic ingredients
- Red Kuri Squash, roasted or use a Mini Pumpkin or large Sweet Potato, *see note
- 1 Red Bell Pepper, roasted
- 1 Garlic Clove, pressed
- 1 Lemon, fresh squeezed
- 1T Extra Virgin Olive Oil or Coconut Oil
- 1T Almond Butter or Tahini
- 1T Full-fat Coconut Milk – optional, to thin
- 1t Himalayan or Sea Salt
- 1/8t Chipotle Pepper or use Chili Pepper if you don’t like a smoked flavor, add more for a spicier dip
- 1T Smoked Paprika or use regular Paprika if you don’t like a smoked flavor
- Optional – 1/4C Sun-dried Tomatoes, chopped
*Note – use enough roasted squash to fill a 3.5 cup food chopper or food processor after adding all other ingredients. You can substitute a mini pumpkin, roasted or a large, baked sweet potato.
DIRECTIONS – preheat oven to 450 degrees. Wash and cut squash in half, removing seeds and stem. Scrape out excess membrane. Slice each half of the squash into four or five pieces. Arrange in a shallow baking dish or roasting pan. Roast twenty to thirty minutes or until squash is tender. Scrape roasted squash from skin. Add to a medium size bowl. Discard skin.
Add all ingredients to a 3.5 cup food chopper or food processor. Top with enough roasted squash to fill container. Blend on puree until hummus is thick and creamy.
Serve with a variety of fresh cut vegetables, sliced pita bread triangles, or tortilla chips.
