Roasted Red Pepper Tomato Soup

ROASTED RED PEPPER TOMATO SOUP

Roasted Red Pepper Tomato Soup. Easy, low calorie recipe. Pair with a leafy green salad for a quick plant-based or Paleo diet meal. Great for weight loss.

INGREDIENTS

  • 2 Jars or 14.5 oz. BPA-free cans of Diced Tomatoes
  • 3 Large Red Bell Peppers
  • *Optional—1 Chili Pepper for a little spice
  • 1 Small Onion, sliced
  • 4 Garlic Cloves, peeled
  • 1T to 2T Olive Oil
  • 2C Vegetable Broth
  • 1T Blackstrap Molasses or Raw Honey
  • 1 Small Handful of Fresh Basil Leaves
  • 1 Bay Leaf
  • 1T Paprika
  • Optional – 1 Vegetable Bullion Cube, like Rapunzel Brand
  • 1t Himalayan Salt, or more to taste
  • 1/4t Fresh Ground Black Pepper, or more to taste
  • Optional—Cucumber as garnish
  • Optional—Celery sticks or crackers

DIRECTIONS—preheat oven on highest roast setting. Peel garlic cloves. Slice onion. Slice peppers in half and remove stems. Coat vegetables with 1 to 2 tablespoons of oil. Place on parchment lined baking sheet. Roast garlic cloves and onion. Util browned on both sides. Note: garlic will cook faster then the onion. Roast peppers on both sides. Remove from oven when skin is crispy and black. Cool peppers. Then peel off skin.  Add roasted vegetables to food processor. Along with tomatoes and tomato puree. Transfer pureed tomato mixture to soup pot. Add broth, molasses, basil, bay leaf, paprika, bullion. And salt and pepper, to taste.  Bring to a boil. Reduce heat. Simmer uncovered 30 minutes or longer. Or until soup is boiled down and thickened.  Remove basil leaves and discard. Optional—for Valentine’s Day. Peel cucumber. Slice into planks.  Use heart shaped cookie cutter. Cut-out hearts. Add to individual bowls of soup as garnish.  Serve with celery sticks. Or raw crackers or Mary’s Gone Crackers.
