Salsa Fresca Fresh Tomato Salsa
Salsa Fresca Fresh Tomato Salsa or try using fresh mango or pineapple. Mango Salsa & Pineapple Salsa are great on grilled or baked chicken & fish entrees.
INGREDIENTS – please use organic ingredients
Prep Time: 20 minutes/Total Time: 20 minutes
- 2 Medium Tomatoes, about 2 cups diced small
- ½ Small White Onion, about ½ cup diced small
- 1 Jalapeño Pepper, chopped, *see note
- 1 Lime, about 2T fresh squeezed juice
- 1/3C Fresh Cilantro Leaves, chopped + whole leaves as garnish
- 1 Garlic Clove, pressed
- 1/4t Sea Salt or Himalayan salt – optional
- Dash of Fresh Ground Pepper
- Optional – 1 English Cucumber or tortilla chips
NOTE: for mild salsa Fresca or fresh tomato salsa, substitute one-fourth to one-half green bell pepper for the jalapeno. To make this spicier, include Jalapeño seeds and membranes.
DIRECTIONS
- Mix all ingredients in a non-metal bowl. Let stand 5 minutes. Hand chop and dice ingredients. Or add all ingredients to a food processor. Pulse until mixed. For chunkier salsa, pulse all ingredients except for tomatoes. Add tomatoes. Pulse just enough to blend tomato while still leaving in chunky.
- Transfer to a serving dish and top with whole cilantro leaves as garnish.
- Serve with sliced English cucumbers or Baked Tortilla Chips. Try Guiltless Gourmet brand or make your own Homemade Baked Tortilla Chips.
- Or use as a dip for other fresh raw vegetables like zucchini. Can be used as a topping for lettuce “tacos”. Salsa Fresca also goes well as a topping on grilled or broiled chicken or fish.
