GRILLED VEGETABLE KABOBS MARINADE

INGREDIENTS MARINADE
•1/4C Extra Virgin Olive Oil
•1 Lemon, fresh squeezed
•2T Dijon Mustard
•2-4 Cloves Garlic, pressed
•2T Fresh Italian Parsley, minced—omit if using dried
•1T Fresh Rosemary, minced or 1t dried
•1T Fresh Marjoram, minced or 1t dried
•1T Fresh Basil, minced or 1t dried
•1/2t Sea Salt or Himalayan Salt
•1/4t Chipotle Pepper or Black Pepper

INGREDIENTS FRESH VEGETABLES

Choose one or more of your favorites—

  • Banana Pepper
  • Bell Pepper: green, yellow, red
  • Broccoli
  • Brussels Spouts
  • *Carrots
  • Cauliflower
  • Eggplant
  • Hot Peppers
  • Mushrooms
  • Onions
  • Patty Pan Squash
  • Peppers—hot peppers
  • *Potatoes, skin on
  • *Pumpkin
  • Sweet Potatoes, skin on
  • Tomatoes—cherry tomatoes work best
  • *Winter Squash—Butternut, Kabocha, Acorn, etc.
  • Yellow Summer Squash
  • Zucchini

DIRECTIONS: soak wooden skewers 20 min. in water. Heat grill. Whisk all ingredients, except fresh vegetables, well. Wash veggies, cut in chunks, alternate on skewers. Brush with marinade mix, grill just until done. Do not overcook. *Some veggies take longer, partly cook halfway by steaming or boiling prior to grilling. OR grill each veggie on its own skewers.
