HOMEMADE COCONUT MILK RECIPE

Homemade coconut milk is easy to make and is fresher and tastes better than coconut milk from the can or from the carton. 

INGREDIENTS

  • 2C Organic, Unsweetened Coconut Flakes or Shredded OR 1C Fresh Coconut Meat
  • 4C Filtered or Spring Water
  • 2 Medjool Dates, optional to sweeten

HOMEMADE COCONUT MILK RECIPE DIRECTIONS

Step 1: Start with a glass jar or bowl with a tight fitting lid. Add coconut flakes and water. If using dates, slice and remove pit. Chop into small pieces and add to coconut and water. Soak for two hours, or longer. Shaking frequently. If soaking longer than 2 hours, put in airtight glass container. And refrigerate until ready to blend.

TO SKIP SOAKING PROCESS

Heat water to boiling in saucepan. Add coconut flakes or shreds. If using dates, slice and remove pit. Chop into small pieces and add to coconut and water. Cover pan with a tight fitting lid. Remove pan from heat. Let mixture cool before using.

Step 2: Add softened coconut, water, and dates {if using} to blender.

Step 3: Blend on high. If using dates, blend well. Makes sure there are no date pieces left in milk.

Step 4: Strain the coconut milk through a nut milk bag.  Strain over a large glass bowl. Using a nut milk bag is messier. But you will get more nut milk.

OR

Put a funnel with a wide mouth in a pitcher. Put a snuggly fitting fine mesh sieve inside the funnel. Or use a fine mesh strainer. Pour nut milk mixture slowly into sieve or strainer. Using a spoon, press down on pieces in the sieve. To release excess liquid.  Remove built-up coconut pulp. Discard. Continue running mixture through sieve. Until all of the mixture is strained. 

NOTE: This recipe yields about 4 cups of fresh coconut milk. Store in the refrigerator in a sealed glass container. Mason jars are perfect for this. Use within 5 days. Or freeze until ready to use. Separation will occur. Shake well before using coconut milk.
