Plant Based Chili Recipe


Plant based chili recipe full flavored vegan chili perfect for meatless Monday. Make it with or without tofu. Vegetarian option add a dollop of sour cream.

INGREDIENTS

  • 2-14. 5 oz. BPA-free Cans Crushed Fire Roasted Tomatoes
  • 2-1/2C Homemade Black Beans or 2-14.5 oz. BPA-free Cans Black Beans
  • 1/2 of a 32 oz. Carton of Vegetable Broth, like Pacific brand
  • 1/2C Dry Red Wine, sulfate-free
  • 1T Lime Juice, fresh squeezed
  • Optional – 1 Vegetable Bullion Cube, for more flavor
  • 2C Onion, chopped
  • 1-1/2C Green Bell Pepper, chopped
  • 1C Celery, chopped
  • *1-2 Red Chili Peppers, roasted, or more for spicier chili
  • 2-4 Garlic Cloves, peeled
  • 2T Extra Virgin Olive Oil + more for coating chili peppers
  • 2 Bay Leaves
  • 1T Paprika
  • 1t Ground Cumin
  • *1/2t Ground Chili Pepper, or more for spicier chili
  • Optional—8 oz. Extra Firm SprouTofu, like Wildwood brand plus 1T Olive Oil, if using tofu decrease beans by half

Vegetarian option–top with a dollop of sour cream or 0% fat, plain Greek yogurt and chopped, fresh cilantro.

DIRECTIONS—set oven to roast setting at 550ºF. Slice chili peppers in half, coat with a little oil, place on parchment lined baking sheet, roast until skin is black about 5 minutes each side. Remove from oven, cool, peel, chop, and set aside. Optional—include seeds and membranes for spicier chili. In a Dutch oven, gently heat 2 tablespoons oil, over medium heat, add onion, bell pepper, and celery, sauté until lightly browned. Add roasted chili peppers, crushed tomatoes, broth, wine, lime juice, bullion, bay leaves, and spices to pan. Bring to a boil, reduce heat, simmer uncovered until thick, about 30 minutes. Add beans last 5 to 10 minutes of cooking, to warm through. If using canned beans, drain and rinse, before adding. If using tofu, crumble, then coat with dried spices, mixing well. After sautéing vegetables, add additional tablespoon of oil to pan and sauté tofu a few minutes until spices are cooked in. Add at the end of cooking chili, with the beans, continue cooking just long enough to heat.
