
INGREDIENTS – makes 4 wraps
2 Chicken breast – boneless, skinless organic, hormone, pesticide, antibiotic & cage free
1 clove garlic, quartered
1/2C dry white wine – preferably sulfate-free from the health food store, same price
1T Safflower oil, unrefined in a dark bottle, dark bottles prevent oxidation of oil
2T Fresh chopped herbs mixed: sage, rosemary, marjoram, basil, Italian parsley, etc.
OR
1t Dried herb seasoning of your choice – not as flavorful or nutritional
Lime, fresh squeeze
1T extra virgin olive oil
1/2t Himalayan salt
Dash of Chipotle pepper
4 sprouted grain tortillas – when grain sprouts it unleashes protein, not an empty carb

8 collard green leaves – organic from the health food store or farmer’s market for gluten-free wraps
4T stone-ground mustard – best choice or use 4T garlic or other flavored aioli
1C feta cheese or a mix of low-fat mozzarella cheese and parmesan reggiano, fresh grated
4-8T nutritional yeast – optional for dairy-free wraps
DIRECTIONS: trim off stem and the bottom, narrow edge of each collard green. Place 2 collard greens on a large plate, stems facing in opposite directions. Spread 1T of stone-ground mustard on the tortilla (healthiest choice) or 1T of nice garlic aioli like Wildwood brand or other flavored aioli (yes, it’s real mayonnaise!).

At the end closest to you, add the 1/4 of the sliced chicken breast at the top of the tortilla and 1/4 of the cheese on the bottom half of the tortilla. Just below the chicken breast, add your vegetables in rows down the tortilla, ending with the lettuce.
Start rolling the tortilla from the chicken side closest to you and bunch the vegetables up as you roll along, shoving the lettuce inside of the roll at the end. Slice the wrap in half on a diagonal and arrange on a small plate. Repeat with the other 3 tortillas.
